Mike grew up in BBQ country! Salisbury, NC (Lexington area) has produced some of the best BBQ around unless you are from Rocky Mount or Memphis or Texas or KC. BBQ is in his blood. After serving people in the church and leading mission trips for many years, and managing a BBQ restaurant in Raleigh, he decided to take early retirement. After a year of culinary school, and cooking for years, the dream is finally realized!!

Carlos is close to graduating with a culinary degree. We have both attended Jack’s Old South Cooking School with Myron Mixon, winningest man in BBQ and The Ultimate School of BBQ with Christopher Prieto, Pitmaster and Author of The Ultimate Book of BBQ published by Southern Living.

The first event with the “new” trailer was Operation In As Much-Fayetteville. The 20 year Anniversary of OIAM with Snyder Memorial Baptist Church. We fed 100 homeless residents of Fayetteville on a Saturday in April 2015. Community Service is at the forefront of Hopkins BBQ. We want to serve the community assisting faith Based non-profits in any way we can.
